上湯獅子頭 Lion-head In Superior Soup


捨棄傳統油炸肉丸,作法簡單、熱量更少
Lion-head is an interesting dishes name, its means big meatball not really a lion's head.

材料 Ingredients:

A:
豬絞肉                     Pork 300 g (minced),
金華火腿(切碎)      Jinhua ham 5 g (minced),
蝦米(切碎)              Dried shrimp 1/2 Tbs. (minced),
蔥末                         Green onion 1 1/2 Tbs. (chopped),
紅蘿蔔(切碎)          Carrot 1 1/2 Tbs. (minced),
B:
白菜                         Chinese cabbage 500 g,
蝦米                         Dried shrimp 1/2 Tbs.
乾香菇1朵(切絲)    1 Dried mushroom,(shred),
紅蘿蔔(切片)          Carrot 20 g (pieced),
金華火腿(切片)      Jinhua ham 15 g (pieced),
蔥末                         Green onion 2 Tbs. (chopped),
高湯或水                 Broth or water 700 ml.
油                             Oil 2 Tbs.

醃料 Marinade:

醬油                         Soy sauce 1 Tbs.
胡椒粉                     Pepper powder 1/4 tsp.
糖                             Sugar 1/2 tsp.
水                             Water 2 Tbs.

調味 Seasoning:

鹽 適量                    Salt to taste.

作法 Methods

  1. 豬絞肉加醃料混合均勻醃15分鐘後加入材料A的其他食材混合均勻整形成肉丸狀備用。Add pork in marinade and mix well and marinate for 15 minutes.Then add in (A) whole other ingredients mix well and shape into meatballs.
  2. 大白菜川燙瀝乾備用。Blanch the cabbage and drained.
  3. 燒熱兩大匙油爆香材料B裡的蝦米、香菇、火腿、蔥末。Heat the pan with two tbs of oil to saute material (B) dried shrimp, mushrooms, ham, diced green onion.
  4. 加入作法(1)的白菜、作法(2)的肉丸、材料B的胡蘿蔔及高湯或水。Add in step(1) of cabbage, step(2) of the meatballs, material (B) carrot and broth or water.
  5. 加蓋煮滾後轉小火炆10~15分鐘加適量鹽調味,上碟。Cover and bring to boil, then stew for 10 to 15 minutes with low heat. Add salt to taste, dish it up.

Tips:

  1. 沒有金華火腿也可以用其他火腿取代。You can use any kind of ham if no Jinhua ham.
  2. 製作肉丸的時候在手上抹一點油會比較容易整型,外形更漂亮。When making meatballs put some oil on hands will be easier.
