酸鹹菜蒸富貴魚 Steamed Orbicular batfish


富貴魚長得圓圓扁扁的擺盤好看蒸起來易熟,名字又喜氣所以在喜慶宴會很常見,它其實很適合當家常菜因為價格合理料理容易(意思是很難煮失敗啦!)今天就來推薦給大家。


材料:
富貴魚一尾約550克
薑絲20克
辣椒絲約7克
蔥絲約30克
酸菜絲約75克
油一大匙

調味料:
鹽適量
幾滴麻油
米酒一大匙
雞粉1/2大匙(可省略)


Ingredients:
A Orbicular batfish about 550 grams
Ginger 20 g (shred)
Red chili 7 g (shred)
Green onion 30 g (shred)
Chinese sauerkraut 75 g (shred)
One tbsp oil

Seasoning:
Salt to taste
A few drops of sesame oil
A tbsp of rice wine
1/2 tbsp chicken powder



準備: 魚洗淨擦乾後魚身劃切3道,兩面塗抹上鹽,這個步驟很重要請不要省略。

To prepare: Wash and dry the fish then make 3 light cuts,put some salt on both sides. (This step is important)

做法

  1. 熱油鍋中火炒香魚以外的所有材料。
  2. 加入調味料拌均勻後倒在魚身上。
  3. 中大火蒸熟約13分鐘。趁熱食用。
Methods:
1. Heat the pan with a tbsp oil over medium heat and saute all ingredients except fish.
2. Add in seasoning and mix well, pour on the fish.
3. Steam over high heat for about 13 minutes untill cooked . Serve hot.
